Orange Sponge Cake



  • 300g   flour (cake or all purpose)
  • 300g   sugar
  • 3         oranges, medium size (15 tbsp juice and 6 tbsp zest)
  • 3        eggs
  • 75g    butter
  • 1 packet baking powder (11 g)


  1. Separate egg yolks and egg whites.  Beat eggs yolks and sugar with an electric mixer.
  2. Add flour gradually, oranges juice, orange peel, melted butter and baking powder.
  3. Whip egg whites until stiff and incorporate them into the mixture.
  4. Now mix with a ladle from the bottom to the top.
  5. Put the mixture into a buttered pan or, if preferred, cover the pan with parchment paper.
  6. Put the ban in preheated oven at 180 deg C for 35-40 minutes.
  7. Decorate with powdered sugar (optional)

Recipe makes 1 9-inch round cake

3 eggs

  1. 1 cup            white sugar (200 g)
  2. 1 tbsp           orange zest
  3. 1 1/2 cups    cake or all-purpose flour (187 g)
  4. 2 tsp             baking powder
  5. 6 tbsp           orange juice


  1.     Preheat oven to 325 degrees F (165 degrees C). Grease and flour one 9 inch round pan.
  2.     Separate the eggs while cold, then bring to room temperature.
  3.     Beat egg yolks, sugar and grated orange rind until light and fluffy. Mix flour and baking powder together. Alternately add flour mixture and orange juice to the egg yolk mixture.
  4.     In a separate large CLEAN bowl, with a CLEAN whisk or beaters, beat egg whites to stiff peaks, and fold into batter.
  5.     Pour batter into prepared pan and bake at 325 degrees F (165 degrees C) for 50 to 60 minutes.
