Microwave Sponge Cakes - Génoise à faire au micro-onde
- 2 eggs
- 150 mls oil
- 150 mls milk
- 150 g sugar
- 5 mls vanilla essence
- 1 cup plain flour (125 g)
- 3 tsp baking powder
STEP 1 Whisk ingredients together with a hand whisk.
STEP 2 Fold in sifted flour and baking powder.
STEP 3 Line a 20 cm round casserole or plastic container with paper towel.
STEP 4 Place mixture in dish and microwave on High for 5-6 minutes. Do not overcook. The cake should still look slightly wet on the top.
To make a chocolate cake, replace 2 tablespoons of the flour with cocoa and use a teaspoon of coffee dissolved in a little boiling water. For special occasions, I have sometimes added an extra egg and an extra third to all the ingredients to make a larger cake. It is so quick to make, I usually make 3 layers.
