Chocolate Chocolate Cake

Ingredients
• 3 tbsp       unsweetened cocoa powder (21 g)
• 3 tbsp       flour (22 g)
• 3 tbsp       sugar (36 g)
• ¼ tsp        baking soda
• ¼ tsp        salt
• 1 tsp         vanilla
• 3 tbsp       oil (canola oil or coconut oil)
• 3 tbsp       lowfat milk or non-dairy milk

Instructions
1.   In a mug, combine cocoa powder, flour, sugar, baking soda, and salt by stirring with a fork.  Add the vanilla, oil, and milk and stir again, making sure to get rid of any dry-ingredient clumps.

2.   Microwave on high for 2 minutes.  Serve with ice cream if preferred.

Microwave Cake with Ganache Frosting

Ingredients

  • 1/4 cup          vegetable oil, plus extra for greasing
  • 1 cup             whole milk
  • 1 cup             sugar (200 g)
  • 2 tsp              lemon juice
  • 1 tsp              vanilla extract
  • 1-1/4 cups     all-purpose flour (156 g)
  • 1/4 cup          cocoa powder (29.50 g)
  • 1 tsp              salt
  • 1/2 tsp           baking powder
  • 1/2 tsp           baking soda

Instruction
1.  Grease a 9-inch microwave safe cake dish. Line with a piece of parchment and grease the top of the parchment paper.
2.  Mix together vegetable oil and sugar. Whisk in the milk, lemon juice and vanilla extract. Stir in the flour, cocoa powder, salt, baking powder and baking soda just to combine. Pour into prepared dish.
3.  Microwave on high 5-6 minutes until a toothpick inserted in the center comes out clean. Rest for 5 minutes and then invert onto a cake stand.

Microwave Ganache
1 cup          heavy cream
226 g          bittersweet chocolate, chopped

Instruction

1.  Microwave the heavy cream until it begins to bubble, about 1 minute.
2.  Pour the hot cream over the chopped chocolate and allow to sit 1 minute.
3.  Whisk the cream and melted chocolate together to form the ganache and pour over the cake. Serve!

  • Salt                               1 pinch
