Light Whole Wheat Bread


Light Whole Wheat Bread (Bread Machine)

Yield 1 loaf

  •     280 ml              Luke warm water
  •     1 tbsp               Lemon juice
  •     425 g                Stoneground wholemeal bread flour
  •     75 g                  Strong unbleached white bread flour
  •     4 tsp                 non-fat powdered milk
  •     1 tsp                 salt
  •     2 tsp                 sugar
  •     25 g                  butter
  •    1-1⁄2~2 tsp        active dry yeast

Tepid water is a mixture of two parts cold water to one part boiling water and is frequently used in breadmaking.


  •     Place ingredients in the order given in bread machine bucket allowing it standing 15 min.
  •     Process on basic/white cycle, medium color crust setting.
  •     You can use warm (tepid) water and the rapid (3 hr) setting.
  •     You can use 1 1/2 tsp yeast, but 2 teaspoons produces a fluffier loaf.




Bread Machine Light Whole Wheat Bread

TOTAL TIME: Prep: 5 min. Bake: 3-4 hours
MAKES: 16 servings


  •     1/2 cup warm milk (70° to 80°)
  •     1/2 cup water (70° to 80°)
  •     1 egg
  •     3 tbsp honey (63.75 g)
  •     2 tbsp butter, softened (28 g)
  •     1-1/2 tsp salt (11 g)
  •     2 cups bread flour (254 g)
  •     1 cup whole wheat flour (130 g)
  •    2-1/4 teaspoons Red Star® Platinum Superior Baking Yeast

In bread machine pan, place all ingredients in order (suggested by manufacturer). Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tbsp of water or flour if needed).

Yield: 1 loaf (1-1/2 pounds).


Light Whole Wheat Loaf (Super Soft)

Ingredients and Steps

  • 1/4 cup      bread flour (34 g)
  • 1 cup         water

-> stir
-> cook flour mixture under medium heat and stir constantly
after 5 min
after 10 min
put plastic warp on top to avoid hardening
leave it till totally cool down

-> after few hours
use half to make a 1.5 pound bread

  • 1 cup       milk
  • 3 tbsp      condense milk
  • 1 cup       bread flour (136 g)
  • 1 cup       whole wheat flour (130 g)
  • 1.5 tsp     active yeast

-> put into bread machine on “dough” function
-> put little by little bread flour into the kneading dough

add 2 tbsp butter (28 g)
put more bread flour into kneading dough

make sure the dough is not too wet and not too dry
When it becomes a ball, close the cover and let it finishes with the “dough” cycle

After about 13 minutes, bread machine stopped
Leave the dough inside to rest for one hour

After one hour, the dough becomes 2 times bigger

Put a long piece of plastic wrap on working table
Put some bread flour on top
get the dough out

leave it relax for 10 minutes
cut into 3 parts

flatten it with a roller
and then roll it up

do the same for the other 2 cut doughs
put in a 9″ bread loaf pan
use the same plastic wrap to cover it up

Put 1/2 cup of water in microwave and heat up for 1 minute
leave the pan inside the microwave for one hour together with the 1/2 cup of hot water

After one hour, put the pan into a preheat oven with 350F
a super soft and healthy daily light whole wheat bread
