One Pound Loaf

1)

Ingredients

  • 1                    Egg
  • Egg + Milk     to make up 1 cup + 5 ml milk
  • 1 tbsp             Butter (14 g)
  • 1/3 cup           Lemon curd (75 g)
  • 1/2 cup           rolled oats (45 g)
  • 1/2 tsp            salt
  • 289 g              Bread Flour
  • 1-1/2 tsp         Active dry yeast for bread machine

Procedure
1.  Place all ingredients in bread pan.  Press START.

2.  Observe the dough as it kneads. After 5 to 10 minutes, if it appears dry and stiff or if your machine sounds as if it’s straining to knead it, add more liquid 1 tablespoon at a time until dough forms a smooth, soft, pliable ball that is slightly tacky to the touch.

3.  After the baking cycle ends, remove bread from the pan, place on cake rack and allow to cool for 1 hour before slicing.

  •   Kneading 2 (rapid)     30 min
  •   Rise 1                        35 min
  •   Kneading 3 (rapid)    15 sec
  •   Rise 2                        55 min
  •   Baking                       40 min
  •   Total time                  2:43 hrs

  •   Rise 2                        55 min
  •   Baking                       40 min
  •   Total time                  2:35 hrs
