Basic Sponge Cake

Basic Sponge Cake without leavening agent

Ingredients

    • 4/5/6                           eggs
    • 83/104/125  g             all purpose flour
    • 133/167/200  g           granulated sugar
    • 1/6  1/5  1/4  tsp         salt
    • 1 tsp                           vanilla

Eggs must rest in room temperature for 3 hours.  Preheat the over to 180 deg C

Direction

  • 1. Line the bottom of a tube pan with parchment paper.  Make sure the wall of the pan being absolutely clean and free from oil/grease.
  • 2. Mix the eggs – 20 sec (medium speed)
  • 3. Whisk the eggs plus sugar – 5 min (high speed)
  • 4. then add salt and vanilla and mix them – 10 sec (high speed)
  • 5. Sieve the flour into a dish
  • 6. Mix the batter at high speed and slowly pour in the flour  – 30~40 sec
  • 7. Pour the batter into the tube pan.
  • 8. bake  20 min at 180 deg C
  • 9. Remove the cake from oven and cool it on a wire-net for 10 min
